not to be bias or anything,
but this is the best broccoli cheese soup i have ever tasted!
seriously.
this is my mom’s recipe and a perfect comfort food for these cold months ahead.
you need to try it!
first you need to make a white sauce mix…..
White Sauce Mix:
Ingredients-
- 2 cups instant nonfat dry milk
- 1 cup all purpose flour
- 2 teaspoons salt
- 1 cup butter or margarine
Directions-
- In a large bowl, combine dry milk, flour and salt.
- Mix well with a pastry blender (or if you want use your Bosch with the whisk attachment)
- Cut in butter or margarine until mixture resembles fine crumbs.
- Put in a large airtight container and label with date and contents.
- Store in refrigerator. Use within 2 months.
now the good stuff….
Broccoli Cheese Soup:
Ingredients-
- 1 1/2 lbs. fresh broccoli, chopped (about 3 cups)
- 2 potatoes, peeled and diced
- 1 carrot, peeled and diced
- optional: 2 stalks of celery, chopped (Adam hates celery so I don’t use it a lot)
- 1 onion, chopped
- 4 cups chicken broth (or use 4 cups of water and 4 chicken bouillon cubes)
- 1 1/2 cups White Sauce Mix (recipe above)
- 1 1/2 cups milk
- 1 cup shredded Cheddar cheese (or Colby)
- Salt and pepper to taste
Directions-
- In a large 4-quart saucepan, put prepared broccoli, potatoes, carrots and onion.
- Add chicken broth to cover vegetables.
- Bring to a boil and cook over medium heat for 15 to 20 minutes until vegetables are almost tender.
- In medium bowl, combine White Sauce Mix and milk.
- Add mixture to cooked vegetables, stirring constantly 2 to 3 minutes until thickened.
- Stir in cheese until melted.
- Add salt and pepper to taste.
Makes about 2 quarts soup or 6 large servings.

oooh this looks SO yummy!!!! i may have to try it one day the hubs isn't here for dinner (he HATES all things creamy / cheesy - crazy i know)
oh and i think it was pretty straight forward. Sometimes with stuff like that you don't need all the pictures :)
